Finish all of your errands during the day without having to worry about cooking in the evening. This simple recipe can be started first thing in the morning in your slow cooker and be ready to serve by dinner time.

 

 

Ingredients

  • 4 cups green cabbage, cut in 1/2 inch pieces
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 12 ounces lean ground beef
  • 1-3/4 cups (14.5 ounce can) low sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground allspice
  • 2 cups cooked brown rice
  • 2 cups canned diced tomatoes
  • 1 cup spicy vegetable-tomato juice, no salt added
  • 2 tablespoons no salt added tomato paste

 

Directions

  1. Combine the first nine ingredients in a 3-1/2 or 4-quart slow cooker. Use a spoon or spatula to break the meat into small pieces. Cover and cook on low 7 to  8 hours or on high 3-1/2 to 4 hours.
  2. Remove lid, stir in rice, diced tomatoes, vegetable-tomato juice and tomato paste. Cover and cook an additional 30 minutes on high.
  3. Adjust seasonings and serve.
